This Month's Pineapple Recipe:
January 2010 : Pineapple and Orange Compote
Makes 6 servings
2 13 1/4 ounce cans pineapple chunks, drained
1 cup orange juice
1 cup miniature marshmallows
About 1 hour before serving:
In large bowl, gently toss all ingredients to mix well: cover and refrigerate 45 minutes to blend flavors and soften marshmallows.
