This Month's Pineapple Recipe:

March 2008 : Baked Pork Chops with Pineapple
Makes 4 Servings

4 lean pork chops about 1" thick
1 clove garlic
1/4 tsp. cumin
1/4 tsp. pepper
1 - 8 oz. can crushed pineapple
1 tsp. grated orange rind
1/2 tsp. grated fresh ginger
2 tbsp. sherry


Mash garlic clove with side of knife. Rub chops with garlic, cumin and pepper. Brown in ovenproof pan. Mix remaining seasonings and pour over chops. Cover and bake in 350 degree oven for 1 hour.
