This Month's Pineapple Recipe:
March 2010 : Pineapple Oatmeal Pie
Makes 6-8 Servings
3 eggs
2/3 cup sugar
1 cup brown sugar, firmly packed
2 tbsp. melted butter or margarine
1 tsp. vanilla
2/3 cup quick-cooking rolled oats
2/3 cup flaked coconut
1 cup raisins
1 (8 1/4 oz.) can crushed pineapple
1 unbaked 9" pie shell
Beat eggs until lemon colored. Gradually add sugars, beating well.
Blend in butter and vanilla. Stir in oats, coconut, raisins and un drained pineapple.
Pour into pie shell.
Bake in 350° oven 50 minutes or until filing is set. Cool on rack.
